Molo Soup
Serves: 10
Ingredients:
Filling Ingredients: 1/2 kg ground pork 1 cup flaked chicken meat 1/2 cup chopped, shelled and deveined shrimps or prawns 2 tablespoons finely chopped spring onions 2 eggs 2 cloves garlic, crushed and minced 1 teaspoon salt 1 tablespoon soy sauce - shake of pepper - 7 to 8 cm square molo or wanton wrappers.
Broth Ingredients:
12 cups chicken stock 2 cloves garlic, crushed and minced 1 medium onion, sliced 2 tablespoons cooking oil 1/2 cup chopped shallots
Procedure:
1. Mix all the filling ingredients except the molo wrappers
2. Divide into 2 and set aside one half for the broth
3. Wrap the remaining mixture by teaspoonful into the molo wrappers; brush with a
little water or egg white to stick
4. Sauté garlic, onion and remaining half of the mixture
5. Cook for 3 minutes; add chicken broth, salt and pepper to taste
6. Bring to a boil and add molo wrapped ingredients; reduce heat
7. Simmer for 15 minutes
8. Sprinkle with spring onions just before serving
